Cajun Edamame Boil {Vegan, Gluten-Free}
All the flavor and messy fun of a Cajun seafood boil, but in a more cost effective, healthy, and easy way.
I love the idea of Cajun seafood boils but I’ll never make one. This greeny beany version is a much cheaper and easier alternative that makes a great snack in the kitchen or strewn across a backyard picnic table.
This spicy, sweet treat requires you to get in there with your hands or suck the beans out with your mouth to get all the good flavors. You’ll want to eat these around people you’re NOT trying to impress.
And remember to serve up your beans with the appropriate accouterments: halved lemons for squeezing, hot sauce, and melted butter for additional dunking. Oh, and napkins.

Cajun Edamame Boil {Vegan, Gluten-Free}
Serves 6
All the flavor and messy fun of a Cajun seafood boil, but in a more cost effective, healthy, and easy way.
Ingredients
2 cups Water
1 Tablespoon Creole Seasoning
1 Tablespoon Ol' Bay Seasoning
1 large clove Garlic, smashed
1 (16 oz) package frozen Edamame in Shell.
Instructions
In a medium pot, bring water, seasonings, and garlic to a rolling boil over high heat. Let boil for 2-3 minutes to infuse the water with flavor.
Pour in frozen edamame and stir. Cover pot and bring water back up to a boil.
Once boiling, reduce the heat to medium, cover and simmer for 4-5 minutes.
Drain water.
Edamame will be flavored but if you would like extra spice, toss drained edamame with an additional 1/4 teaspoon Creole Seasoning and 1/4 teaspoon Ol' Bay.
Serve edamame in shells with optional condiments: halved lemons for squeezing, hot sauce, and melted butter or vegan alternative.
