4-Ingredient Twice Baked Thyme Tiny Taters


Simple, show stopper potatoes that are perfect for any party or holiday!


Ingredients

3 lb bag of small red potatoes

1 Tablespoon minced fresh thyme

1 cup sour cream

1/2 teaspoon salt (plus additional to taste)

Chopped parsley optional


Instructions

Preheat the oven to 400F degrees.


Pierce the potatoes with a fork and put them in a very large microwave safe bowl and microwave for 20 minutes. Pierce several potatoes to see if they are cooked. If the fork goes in without any resistance, they are done. If they are still hard in the middle, cook for 5 more minutes and check again. Repeat this until they are all cooked thoroughly.


Let them cool slightly so they can be handled. Cut each in half and scoop out most of the insides into a large bowl, leaving enough of the potato in tact so that they hold their shape. Place the skins in a large baking dish or on a large baking sheet.


To the potato mixture, add the thyme, sour cream, and salt. Stir to combine. Taste and if you believe more salt is necessary, add it now.


Scoop the mixture back into the potato skins.


Bake for 30 minutes. Turn on the broiler for an additional 5 minutes if extra browning is needed.


Note

To make in advance: prepare the potato mixture, stuff the potatoes, then cover and refrigerate. When ready to eat, bake at 400 F for 45 minutes.
